Egg Pie using Puff Pastry

Hello Everyone!!!

Today we’ll make a classic Pinoy Egg Pie without the hassle of making and rolling a pie crust.

And even better you’ll get a nice and crispy layer of pie crust using a ready-made puff pastry.

What a lazy baker we are ha? Well, just try it and thank me later…

Egg Pie using Puff Pastry

Prep. time: minutes

Cooking time: 60 minutes

Oven Temperature: 180’C

Difficulty: Very Easy

Makes; 1 30x24x6cm Egg Pie

Good for 12 crew

You will need;

30x24x6cm rectangular baking dish, greased with softened butter

For the Pie Crust;

2 sheets puff pastry (300 grams each./30x20cm each)

For the filling;

6 pcs. (medium size/60grams each) whole eggs + 2 egg yolks

300 grams (1 1/2 cup) granulated white sugar

4 drops of vanilla extract

2 can 410grams evaporated milk

2 pcs. egg whites

Direction;

Thaw the frozen puff pastry at room temperature for an hour before using.

Preheat the oven to 180’C

Cover the baking dish with puff pastry, pierce with a fork. Keep inside the fridge while making the filling.

Scald the milk over medium heat, set aside to cool down.

Place the 6 eggs plus 2 yolks with sugar in a mixing bowl. Mix until sugar is dissolved.

Add the vanilla and milk into the egg mixture, stir until well blended.

In a separate mixing bowl, whisk the egg whites until soft peak.

Fold the egg whites into the egg-milk mixture.

Pour the filling in the puff pastry and baked into the preheated oven.

After about 35-40 minutes, check for the color of the egg pie. Once it is nicely browned, loosely cover it with aluminum foil and bake for 20-25 minutes more.

It is done when you insert a knife and comes out clean. Let it totally cool down before cutting the egg pie.

Serve it heavily dusted with icing sugar or without.
