How to Make Dried Herring Fish Tuyo

Hello Everyone!!!

This will be the last part from the series of post that I shared about the Herring Fish that we caught onboard vessel Mergus while we are moored at the port of Nynäshamn, Sweden. We caught more than 12 kilos of Baltic Herrings, I made several servings of Crispy Fried Herring Fish and a serving of Gourmet Herring.
And for the last batch of herrings, I want to make some Dried Herrings or Tuyo as we usually call it in Tagalog. Some call it “Bulad” while in Davao City they call it “Goodbye Head”.

Whenever we catch fresh fish, my main goal is to cook it while it is fresh. I don’t want any fresh fish to end up inside the freezer. If we got more than enough, and it is possible to dry the fish, then I’m always happy to do just that.

How to Make Dried Herring Fish Tuyo

Prep. time: 3 days

Cooking time: 5 minutes

Difficulty: Very Easy

Makes; 1 kilo of Dried Herring or Tuyo

You will need;

3 kg. fresh herring fish (Tamban)

1/2 cup sea salt

Direction;

{Optional}Remove the herring fish scales while it is freshly caught. Place the fish in a container with water, remove the fish scale using your hands.

Rinse in cool running water. Transfer in a colander to drain excess water.

Place in a stainless tray and add the sea salt.

Gently mix with hands until salt is well distributed. Cover with cling film wrap.

Keep inside the fridge for 2 days.

Place it on a cooling rack and let it dry under the heat of the sun for 1 whole day. Or in our case onboard, I place it inside the oven with the temperature set to 50’C and the oven door crack open for the air to circulate. Let it dry for 12 hours.

Wrap dried herrings in clean newspapers. I portion it into 200 grams each packet.

Preheat cooking oil in a pan. Shallow-fry for a minute on each side.

Enjoy it with warm steamed rice or garlic fried rice and garlic vinegar dip.
