Peach Pralin Sansrival

Hello Everyone!!!

Today I will share an adaptation of a Sansrival recipe from my recent baking class.
During my previous vacation, I was fortunate enough to attend Chef RV Manabat’s Baking Class.

I would like to take this opportunity to say a Big Thanks for my Lady Bosses, to Miss Sofia of Crewchart Gothenburg, and to Miss Lorraine, Kat, and Nichelle of Scanmar Manila. “Maraming Salamat” for all the free culinary training that you’ve given me.

On the baking class, Chef RV showed us how to make Pistachio Sansrival. I would like to try making it but pistachio is a bit expensive for our food budget.
So I check other ingredients that I already have onboard and came up with this idea of making a Peach Pralin Sansrival for one of our crew’s birthday.
Needless to say, It was an instant hit for our crewmembers. Our Captain is constantly talking about it asking when I will be making it again.

Peach Pralin Sansrival

Prep. time: 1 hour

Oven temperature: 160’C

Cooking time: 30-35 minutes

Difficulty: Not so easy

Makes; 23-cm. round cake

Good for 12 crew

You will need;

12 pcs. large egg whites (from 63/73grams each egg) 

1 tsp. lemon juice

250 grams. (2 1/4 cups) white granulated sugar

200 grams ground roasted cashew nuts 

*Buttercream;

500 grams unsalted butter

500 grams heavy cream

250 grams icing sugar

1 tsp. pure vanilla extract

pinch of fine salt

*Topping;

1 cup whipped heavy cream 36-40%fat

1 can 820-grams peaches halves in syrup, drained and cut into dice.

1 cup pralin

Direction;

Preheat the oven to 160’C. Prepare 3 pcs.(50x36cm.)baking pan lined with parchment/baking paper.

Place the egg whites and lemon juice in a mixing bowl. Whisk on medium speed until soft peaks form. Slowly add the sugar while continuously beating at medium speed till stiff peaks form.

Add the ground roasted cashew nuts to the meringue, gently fold in until well combined.

Put the meringue in a piping bag with a plain round tip. Pipe two 23-cm.rounds in each baking pan.

Place in the oven and bake for 30-35 minutes or till brown and dry. Let it cool down for a few minutes then peel-off from the baking paper.

*Buttercream;
Place all ingredients in a mixing bowl. Whisk till soft and smooth.

**Assembly;
Spread a small amount of buttercream on the cake stand, place the first meringue layer followed by buttercream spread.
Repeat the process till all the six meringue layer is covered with buttercream. Spread the remaining buttercream on the side.

Cover the side of the cake with Pralin using one hand gently pressing to the buttercream frosting. Brush-off any excess Pralin.

Pipe the top edge of the cake with whipped cream and finish it by putting the diced peaches on top of the cake.

Voila, that’s it! Enjoy your meal !!! 🙂
