Gourmet Herring

Hello Everyone!!!

On my previous post, I shared a simple way of cooking and enjoying freshly catch Herring Fish by shallow frying in oil.
Today, I’ll share another way of cooking Herring Fish. For this recipe, you’ll need a lot of time because we’ll do slow cooking until the Herringbones are tender and the liquid seasoning is reduced to a minimum. This process will give a very rich taste for the Gourmet Herring.
The best part is it tastes better the day after and it can be kept inside the refrigerator for up to 7 days.

I would like to thank Chief/Engineer Ramirez for teaching me this recipe. I have sailed with him many years ago onboard
a Cape-size vessel named, Cape Frontier.

Gourmet Herring

Prep. time: 30 minutes

Cooking time: 6 hours

Difficulty: Easy but time-consuming

Good for 12 crew

You will need;

3 kgs. fresh herring fish

500 grams yellow onions, coarsely chopped

2 heads garlic, peeled and sliced thinly

100 grams (2 thumb size) ginger, peeled and cut into julienne

3 tsp. black peppercorn

3 pcs. bay leafs

1 Tbsp. sea salt

1 Tbsp. white sugar

1 cup Kikkoman soya sauce

1 cup vinegar 5% acidity

1 cup sunflower oil

1 liter water

Direction;

Remove the herring fish scales while it is freshly caught. Place the fish in a container with water, remove the fish scale using your hands.

Cut and discard the head and internal parts but keep the eggs intact, if it has.

In a large cooking pot, place 1/3 portion of the onions, garlic, ginger, black peppercorn, and bay leaves.

Layer 1/3 portion of the herring fish. Do the same for the rest.

Pour in the soya sauce, vinegar, sunflower oil, salt, sugar, and water.

Bring to a boil on high heat, cover with a lid then transfer to very low heat.

Let it simmer for 6 hours or until the liquid is reduced to 25%.

Enjoy it with warm steamed rice of garlic fried rice.

Here’s how I do it;

Our Hero for today! My Kumpare, Motorman Jiar Carillo. He caught most of the fish and even taught me how to clean it.
