Crispy Fried Chicken Wings

Hello there Everybody!!!

Today I will share a simple method of cooking chicken wings that will surely satisfy your crew.
We all love that crisp on our chicken wings and this recipe is all you need.
I got this recipe from a fellow cook back when I was still a messman, that was 18 years ago.
And I use this recipe ever since I start cooking onboard. Hope you and your crew will love it too.

Crispy Fried Chicken Wings

Prep. time: 3 hours

Cooking time: 15 minutes

Difficulty: Very Easy

Makes; 30-32 pieces

Good for 12 crew

You will need;

3 kgs. chicken wings

4 liters boiling water

4 pcs. chicken bouillion/cubes

4 Tbsp. mineral salt or just refined salt

3 pcs. bayleafs

Marinade:

1/2 cup lemon juice (about 2pcs. lemon)

1 Tbsp. salt

some freshly ground black pepper

For Deep Frying:

enough cooking oil

Direction;

Clean and cut the tips of the chicken wings, set aside.

On a large cooking pot with boiling water, add the chicken bouillion, mineral salt and bayleafs.

Stir until the chicken boullion and salt are dissolved.

Add the chicken wings. Bring it back to boil, and reduce the heat to medium. Cover with lid and let it cook for 10-12 minutes.

Drain the water and set aside.

Mix all the lemon marinade, pour it onto the boiled chicken wings.

Gently stir the chicken wings with the marinade until well coated.

Keep the marinated chicken wing inside the fridge for at least 2 hours.

Preheat the deep fat fryer at 180-190’C.

Fry the chicken wings in batches for 5-6 minutes or until golden brown.

Here’s how I do it;
