How to make Chicken Soup Stock

Today we’ll make one of the very basics of cooking, which is making soup stock or Caldo. Most cooks nowadays use water and artificial flavoring to give taste to their foods. Which eventually spoiling and wasting the whole process of making a simple soup.

Time is one of the key ingredients in making a savory soup. Nothing can replace the real flavor of rich soup stock. As I always say, All soup is the same story, it always starts with good soup stock.

Follow these simple steps and all you need is salt and freshly ground pepper to season your soups.

How to make Chicken Soup Stock

Prep. time: 5 minutes

Cooking time: 3 hours

Difficulty: Very Easy

Makes; 5 liters

You will need;

1 1/2 kg. chicken trimmings

6 liters water

Large soup pot 8 liters capacity

Direction;

Place the chicken trimmings and water in a large soup pot.

Bring it to a boil on very high heat. Remove and discard the foam on the surface of the boiling soup stock.

Transfer on very low heat, cover and let it simmer for 3 hours.

Strain the soup stock and discard the chicken trimmings.

Use it for Monggo Guisado, Chicken Sotanghon Soup, Chicken and Fresh Egg Noodle Soup, and a lot, lot more ways to use it.

Note: It can also be prepared a day before you need it. Just keep in the fridge once cooled. It can also be frozen indefinitely.

Here’s how I do it;
