Some years ago while our vessel, M.T. Ardea, was anchored outside of Tees Port, UK. We got lucky and caught more than a 100 kilos of Fresh Atlantic Mackerels.
We are just in the right time at the right place to go fishing Mackerel. Our ship’s provision freezer was full of fresh catch mackerel.
Big thanks to our crew who are very good at fishing. Unfortunately, I don’t have a talent for it, what I’m good at is cooking what they catch.
Here’s one of my favorite dish for this fresh Atlantic Mackerels.
Now on with the cooking…
Baked Atlantic Mackerel
Prep. time: 10 minutes
Cooking time: 30 minutes
Oven Temp. 220’C
Difficulty: Very Easy
Good for 12 crew
You will need;
8 pcs. mackerels (about 250grams each)
4 Tbsp. olive oil
2 Thumbsize (50grms./each) ginger, peeled and sliced thinly
200 grams. tomato, sliced thinly
2 pcs. lemon, peeled and sliced
6 cloves garlic, peeled and sliced thinly
1 tsp. Salt and freshly ground black pepper
1 tsp. Herb Trifecta (a mixture of dried basil, oregano, and parsley)
4 Tbsp. Maggi/Knorr liquid seasoning
Preheat the oven into 220’C
Clean the Mackerels and cut into half.
Pour 2 tablespoon of olive oil on the baking dish, then add half of the ginger, tomatoes lemon and garlic.
Place the mackerels, season with salt and pepper. Add the remaining half of the ginger, tomatoes, lemon, and garlic.
Pour in the Maggi/Knorr liquid seasoning and the remaining 2 tablespoons of olive oil.
Top with some dry herbs od basil, oregano, and parsley.
Baked in the preheated oven for 30 minutes.
Voila, enjoy it with a warm steamed rice.
