Beef Salpicao

Hola, Como Esta’s Everybody!!!

I’ve been busy procrastinating and enjoying our Norwegian Tour Onboard Mergus. Check it out on my Instagram.

But I received a lot of messages on my Facebook Page requesting for a recipe of this dish.

My beautiful cousins, Ruby Jean and Ate Colyn are amongst them. So here is my version of Beef Salpicao.

Now on with the cooking…

Beef Salpicao

Prep. time: 15 minutes

Marination time: 2 hours or overnight

Cooking time: 5 minutes

Difficulty: Very Easy

Good for 12 crew as a 2nd-Main Dish

You will need;

1.5-kilo lean meat of beef, tenderloin or strip loin, cut into thin strips

MARINADE;

8 cloves garlic, minced

1 tsp. sea salt

1tsp. white granulated sugar

1 Tbsp. sweet paprika powder

1/4 tsp. freshly ground black pepper

1/4 cup (4Tbsp./60ml.) olive oil

FOR COOKING;

2 Tbsp. Sunflower oil or any other vegetable cooking oil

6 Tbsp. or 80 grams oyster sauce

2 Tbsp. liquid seasoning, Maggi or Knorr

1/4 cup (60 grams) unsalted butter, chilled

1/2 cup (3 bunch or 100 grams) spring onion, chopped

Direction;

In a mixing bowl mix the beef strips with the marinade. Mix by hand until well blended, cover and keep in the fridge for at least 2 hours or overnight.

Prepare all the ingredients for cooking.

Heat the cooking oil in a large frying pan or wok, if using a gas stove.

Stir fry the marinated beef on very high heat, keep stirring until the meat change in color, about a couple of minutes.

Add the oyster sauce, liquid seasoning, butter and half of the spring onions.

Cook until the butter is melted and the beef is cooked into medium well done.

Transfer to a serving dish and garnish with the remaining spring onions.

Voila! Enjoy it with warm steamed rice or as an appetizer/pulutan. 🙂

Here’s how I do it;

Beef Tenderloin is best use for this dish, but I also use Striploin as an alternative.

Cut it into thin strips.
Transfer into a mixing bowl.

I like to minced my garlic this way.

Add all the ingredients for marinade.

Mix by hand until well blended.

Cover with plastic film wrap for at least 2 hours or overnight.

Prepare all the ingredients needed for cooking.

Onboard I’m using a large 50x42x6 cm frying table. I put it on maximum heat. Add the cooking oil.

Stir fry the marinated beef on very high heat.

Keep stirring until the meat change in color, about a couple of minutes.

Add the oyster sauce, liquid seasoning, butter and half of the spring onions.

Cook until the butter is melted and the beef is cooked into medium well done.

Transfer into a serving dish and garnish with the remaining spring onions.
