Saint Val’s Red Forest Cake

Hello everyone! It’s nice to be back, up and running again.’Tracy’- my vintage Toshiba Satellite L310 will put to rest in a nice frame inside my home, she is now relieved by ‘Laleh’-a new ASUS X441U. Thanks to Sunny Europe for bringing me a new Laptop.

Just in time for Saint Valentine’s Day. And for its first post I’ll be sharing a new recipe dedicated to Saint Valentine, the hopeless romantic of all time.
Since I don’t have any idea of he’s whereabout, I will assume that Saint Val is living somewhere in the middle of a forest surrounded by cherry trees and red roses. A forest thousand miles away on all direction to civilization, presumably.
Living with him in a large century old Victorian house is Cupid, presumably. And I will assume that both of them loves to bake, and both of them like the taste of dark chocolate cake, and both of them love the smooth, fluffy, and tangy taste of a raspberry whipped cream.
Although none of them is planning a date on this special day, but both of them is expecting someone will come knocking on their door asking what they are baking, two lovely gal, wishfully.
And they will invite them inside the house to have a taste of a Red Forest Cake. They will enjoy the whole afternoon chatting and sipping a freshly brewed Zoegas coffee from Sweden while slowly savouring the taste of the cake.
And they will not grow old and live happily ever after… The End! =)

Now on with the cooking…

Saint Val’s Red Forest Cake

Prep. time: 15 minutes

Cooking time: 40 minutes

Difficulty: Easy

Makes; 1 double layer Valentines cake

Good for: 12 crew

You will need;

*For the cake;

2 cups sugar

1 3/4 cups all-purpose flour

3/4 cup unsweetened cocoa powder (Hershey’s, Cadbury or Ricoa)

1 1/2 tsp. baking powder

1 1/2 tsp. baking soda

1 tsp. salt

2 tsp. vanilla powder/liquid

2 eggs

1 cup fresh milk (or 1/2 cup evap. milk + 1/2 cup water){Note; in this recipe I use 1cup/250grms. plain yogurt}

1/2 cup vegetable oil

1 cup boiling water

*For the whipped cream frosting;

500 ml. whipping cream 35-40% fat content, chilled and whip until stiff peak forms.

250 grms.  Raspberry jam

*For toppings;

150 grms. dark chocolate bar, shaved

12 pcs. maraschino cherries

12 pcs. heart design cocktail

Direction;

Preheat oven to 180’C. Prepare 2pcs. 9 x 2 inches/(23cm x 6cm) spring form baking pan, spray with cooking spray or brush with softened unsalted butter or oil. Add 2 tablespoon of breadcrumbs for each baking pan. Set aside inside the freezer while you are preparing the cake batter. {Note; keeping your baking pan frozen just before baking will prevent the “DOMING EFFECT” of the cake.}

Place all the dry ingredients in a fine sieve, sift on a large mixing bowl.

Add the eggs, milk and oil. Whisk for a couple of minutes.

Stir in the boiling water, batter will be very thin. Pour batter on prepared pan.

Bake for 40 minutes or until toothpick inserted in the center comes out clean.

Let it cool completely on wire rack. You can bake this in advance and cover it with plastic and chill for few days or freeze for a month.

Whipped the cream with the raspberry jam until stiff peak forms.

Now the FUN part of it!!! Take out your nice and elegant Cake Stand or just a plate that is a bit wider that your cake.

Scoop some raspberry whipped cream into the plate. Place the 1st layer of the cake top-side-down on the plate.

Spread a layer of whipped cream on the cake. Place the 2nd layer of cake . Cover with whipped cream frosting. Use the remaining whipped cream to pipe decoration around the cake.

Top with dark chocolate bar shaving and maraschino cherries skewed on a heart design cocktail.
