Hello there! If you enjoy reading and baking the Saint Val’s Red Forest Cake which lead you to this post. Now I will show you a recipe dedicated to Cupid, the most stupid archer of all time! The only person, if you consider him a person, who is responsible to all the divorce and annulment since time immemorial.
Cupid is the pupil of Saint Valentine, in an archery class. Although Cupid is a good and fast learner student, he have some vision problem and hand shaking issues during the winter months. Hence, 8 out of 10 who was shot on the winter months will end up in a divorce. But you can’t blame Cupid, its not he’s fault, its just an unintentional mistake.
But when it comes to baking, Cupid is far more better than Saint Valentine, that’s what he believes. Specially when it comes to making cupcakes. While Saint Valentine is good in making cakes, Cupid is an expert when it comes to cupcakes.
Though Saint Valentines know that Cupid can be a good Pastry Chef, He also knew that no one can replace Cupid on the Love-Match-Making job for he’s the only one he got.

Cupid’s Red Forest Cupcakes

Prep. time: 15 minutes

Cooking time: 15-20 minutes

Oven Temp.: 180’C

Difficulty: Easy

Makes; 24 pcs. Red Forest Cupcakes

Good for: 12 crew

You will need;

*For the cake;

2 cups sugar

1 3/4 cups all-purpose flour

3/4 cup unsweetened cocoa powder (Hershey’s, Cadbury or Ricoa)

1 1/2 tsp. baking powder

1 1/2 tsp. baking soda

1 tsp. salt

2 tsp. vanilla powder/liquid

2 eggs

1 cup fresh milk or (1/2 cup evap. milk + 1/2 cup water) or {Note; in this recipe I use 1cup/250grms. plain yogurt}

1/2 cup vegetable oil

1 cup boiling water

*For the whipped cream frosting;

500 ml. whipping cream 35-40% fat content, chilled and whip until stiff peak forms.

250 grms./ 1cup Raspberry jam

*For toppings;

150 grms. dark chocolate bar, shaved

24 pcs. maraschino cherries

24 pcs. heart design cocktail

Direction;

Preheat oven to 180’C. Prepare 2-pcs. 12-hole cupcake baking pan, line with cupcake papercups.

Place all the dry ingredients in a fine sieve, sift on a large mixing bowl.

Add the eggs, milk and oil. Whisk for a couple of minutes.

Stir in the boiling water, batter will be very thin. Pour batter on prepared cupcake paper cups.

Bake for 15-20 minutes or until toothpick inserted in the center comes out clean.

Let it cool completely on wire rack. You can bake this in advance and cover it with plastic and chill for few days or freeze for a month.

Pipe with whipped cream frosting, top with dark chocolate bar shaving and maraschino cherries skewed on a heart design cocktail.
