Ginataang Tuna Bonito

Hello Everyone!!! Today we’ll be cooking Tuna Bonito in coconut milk. It is always best to use a fresh and pure coconut milk, if available. Onboard we are just lucky to have coconut milk in cans, the quality is far from the fresh ones but it is the only one we got so fornow it is the ones onboard.  And it is not always in our provision supplies but recently our food caterer is kind enough to supply it. And recently I was quite fortunate to received
a 10 kilo box of Tuna Bonito from our provision supplier in Koge, Denmark. And the Tuna Bonito is in its perfect condition, fresh-frozen as they describe it. So I decided to share this recipe today.

Ginataang Tuna Bonito is an authentic Filipino dish, cooked with sliced ginger, onions and green chillies together with the pure coconut milk.
It is good freshly cooked for lunch, even better a few after for dinner and at its best the next morning for breakfast.
It is an all day meal always served with hot steamed rice and garlic chilli oil, if you can take the heat of it.

Onboard, cooking on a multi-national crew, this dish can be served and you’ll see how they enjoy the creamyness of the coconut milk on the fine layers of the Tuna meat.
Just don’t forget to cook an extra scoop or two of warm steamed rice.

Now on with the cooking…

Ginataang Tuna Bonito

Prep. time: 10 minutes

Cooking time: 15 minutes

Difficulty: Very Easy

Good for 12 crew

You will need;

2-3 kgs. whole tuna bonito, cleaned, gutted and cut into 3cm thick steaks.

1 can (400ml.) coconut milk

2 Tbsp. cooking oil

2 Thumbsized ginger, peeled and sliced

1 med. yellow onions, peeled and coarsely chopped

3 pcs. green chillies

2 Tbsp. white vinegar

Salt and freshly ground black pepper

Fish sauce for extra taste

Direction;

In a large cooking pot, place the cooking oil, ginger, onions and green chillies.

Add the Tuna Bonito steaks, season with salt and freshly ground black pepper.

Pour in the coconut milk and white vinegar.

Place the cooking pot in very high heat and bring to a boil.

Cover the pot and reduce heat to medium-slow and simmer for 10-12 minutes.

Taste and add fish sauce to give extra taste.

Served warm with hot steamed rice and garlic chilli oil.
