Ardean Style Blueberry Vetting Cheesecake

Hello every one!!! We’ve been busy, working our asses all day and night. After several days of restless long working hours giving all we got to prepare our vessel Ardea to be neat and tidy, our goal is to get the highest possible grade or the least is an excellent grade in our up coming Vetting Inspection.

And as expected, we got Zero Deficiency and Observation. Good thing Ardea have a dozen of Cowboys playing as a perfect team. Like the Chicago Bulls, back when the great Mike and his friends were ruling the NBA.

Working as a team is the key to a safe, efficient and happy living environment onboard any  sea-going vessel.

Now lets take a slice of our success… Then later I’ll give some tips on how to get high grades on your next Vetting Inspection. 😉


Now on with the cooking…

Ardean Style Blueberry Vetting Cheesecake

Prep. time: 15 minutes

Cooking time: 2 1/2 hours

Cooling time: 6 hours to overnight

Oven temp. 180’C for the crust / 160’C for the cheesecake

Difficulty: Easy

Makes; 9 inch round Classic New York Style Cheesecake (12-16 slices)

Good for 12 crew

You will need;

23-cm, 6 1/2-cm high spring form pan, greased and lined with baking paper or parchment paper

3 pieces 45-cm X 45-cm square heavy duty aluminum foil

A high rimmed roasting tray, atleast 5-cm high

For the crust:

250 grms. Danish Cookies crumbs

125 grms. unsalted butter, melted

For the Filling:

1 kg. cream cheese, kept at room temp.

300 grms. (1-1/2 cup) granulated white sugar

pinch of salt

1 Tbsp. vanilla essence

4 pcs. (60 grms./each) eggs

160 ml. (2/3 cup) sour cream 24%fat

160 ml. (2/3 cup) heavy cream 35-40%fat


500 grms. (2 cup) sour cream

60 grms. or 4 Tbsp. blueberry coulis

12 pcs. fresh or frozen whole blueberries


Step 1: Prepare the crust

Preheat the oven to 180’C

Place the danish cookies on a plastic bag and run a rolling pin until it turns into a fine crumbs.

Or grind the danish cookies in a food processor or blender to make a fine crumbs.

Transfer in a mixing bowl and pour in the melted butter, mix until well blended.

Place the mixture of danish cookie crumbs at the bottom of the spring form pan. Use a spoon to platten the crumbs into an even layer.

Place in the oven and bake for 15 minutes. Let it cool down.

Step 2: Make the filling

Reduce the Oven temperature to 160’C.

Place the spring form pan at the center of the aluminum foil.

Gently wrap the side of the baking pan, repeat this for the remaining 2 sheets of aluminum foil.

This is to make sure that no water will go inside your spring form pan while baking in a water bath.

Place the cream cheese in a mixing bowl, add the sugar and vanilla. Whisk until smooth adding eggs one at a time.

Then add the sour cream and heavy cream, mix for another minute or until well blended.

Pour the cream cheese filling over the crust. Use a rubber scrapper to smooth the top.

Step 3: Bake the Cheesecake

Place the springform pan inside a high rimmed roasting tray. Pour in boiling water into the roasting tray creating a water bath for the springform pan.

Pouring boiling water upto half of the spring form pan. Bake the cheesecake for 1-1/2 hour.

Switch off the oven and keep the oven door an inch wide crack open. This will allow the cheesecake to cool down very slowly avoiding the surface from cracking.

Cover the cheesecake with plastic film wrap and chill inside the fridge for atleast 6 hours or preparably overnight.

Step 4: Topping the cheesecake

Take out the cheesecake from the fridge and unwrap.

Run a dinner knife around the side of the cheesecake.

Remove the aluminum foil around the pan. Gently open the latch of the springform pan and slowly lift the side of the springform pan.

Note: if you don’t have a cake stand, cake board or a flat surface dinner plate it is better not to take out cheesecake from the base of the springform pan. And you can also omit lining the springform pan with baking paper or parchment paper.

Using 2 metal spatula, gently insert it below the cheesecake crust and transfer the cheesecake into your cake stand or a flat surface serving dish.

Place the 1 cup sour cream in a mixing bowl.

Add the blueberry coulis, whisk until smooth and well blended.

Pour half of the topping over the surface of the cheesecake.

Keep the remaining half of the blueberry coulis-sour cream topping in a small bowl inside the fridge and take out only when ready to serve.

Gently spread the blueberry coulis-sour cream topping on the cheesecake.

Finish it by placing the 12 pieces whole blueberries around the top of the cheesecake.

Last Step:

Take a slice and enjoy it with a freshly brewed Zoegas coffee.

CookOnboard tip: Cooks and stewards onboard is an easy target for vetting inspectors because most of us is not very familiar to emergency procedures such as Starting/operating the Emergency Generators, Lifebouts and Emergency Fire Pumps to name a few. My advise is to ask the Deck and Engine officers on where and how to operate these things, because one day it might save your life and others.

Questions I got from our recent Vetting Inspection;

1. Do you know where and how to start Emergency Generator? -Yes, I can show you where and how to start our Emergency Generator.{On the switch board, turn the emergency generator from “Automatic mode into Manual mode.” then push the Start button.} Onboard Ardea, there are 3-Starting buttons-All electic.

2. What is the fuel and at least how many hours it can run the emergency generator? -Honestly, I don’t have any idea. {And then the Chief/engineer told us that at least the diesel fuel tank have 18hours of reserve fuel in it.

3. Inside your Meatroom and Vegs. room can you show how to activate the Lock-in Alarm? -Yes, no problem. {That I can don even on pitch black!} And every galley crew should know where is the exact location inside the fridge and how to activate it even on pitch black moment.

4.Inside the galley, what are the type of fire figthing equipments you have? – I have Fire blanket, portable CO2 extinguisher, portable Foam extinguisher and a fix CO2 system for the galley exhaust duct.

5 How to operate your fix CO2 system inside the galley? -1st stop the galley exhaust fan. 2nd close all fire dumpers for the galley exhaust duct. 3rd is to open the CO2 system to extiguish the fire.

And lastly prepare a nice Menu for that special day. A vetting Inspector that enjoys your meal will have light and good mood in giving your vessel an excellent grade.
