Festival Ham with Pineapple Syrup Glaze

Hi there everyone! Holidays are fast approaching and only few days left before Christmas and the New Year.

Today I’ll be sharing a recipe that we all love, a star in this festive season. We’ll be making Festival Ham with Pineapple Glaze!

Now on with the cooking…

Festival Ham with Pineapple Syrup Glaze

Prep. time: 10 mins

Active time: 20 mins.

Cooking time: 2.5 hrs.

Oven Temp. 160’C for 2 hours and 180’C for 30 minutes

Good for Buffet on Christmas Season

You will need;

1 (5.83 Kgs.) whole smoked ham, thawed inside the fridge/vegs.room at 4’C.

1 (850grms.) tin pineapple sliced, reserve the 1/2 cup pineapple juice to make syrup/glaze.

1-1/2 cup brown sugar

3 pcs. star anise

Direction;

Important note; Thaw frozen Ham inside the fridge at 4’C.  Approximately 12-hours for every kilo of Ham. 5-6 kilos of frozen Ham will take approximately 2-3 days to defrost inside the fridge.

If you are in a rush, thaw ham in an unopened sealed wrapper, with enough cold water in a large bucket to cover your Ham completely. Change water every 30 minutes to keep the your Ham chilled. Estimate a minimum thawing time of 1-hour per kilo.

 

Preheat the oven at 160’C

Place the pineapple slice around the roasting tray and put the smoke ham at the center.

Cover with aluminum foil and baked in the oven for 2 hours or until the ham is fully cooked with an internal temperature of at least 80’C.

While the Ham is cooking inside the oven, preapare the Pineapple Syrup Glaze.

*For the Pineapple syrup/glaze; On a small sauce pan, place the sugar and pineapple juice. Stir until sugar dissolved. Bring to a boil, add the star anise and lower heat. Simmer for 5 minutes. Set aside.

Take the out the ham from the oven and remove the aluminum foil cover. Baste Pineapple syrup/glaze all around the cooked ham.

Increase the oven temperature to 180’C. Baked the cooked ham for 30-minutes more without cover, skin side up.

Voila, Festival Ham is ready!

If you are serving it on Holiday Celebrations, Serve it whole on a decorated platter with the pineapple sliced around it.

Here’s how I do it;

5.835 Kilos of Frozen Smoked Ham.

Thawed inside the fridge for 2-3 days.

Open the package and remove the Ham net.

Preheat the oven at 160’C

Stir until sugar dissolved.

Take the out the ham from the oven and remove the aluminum foil cover.
Check with a meat termometer. Internal temperature should read at least 80’C.

Turn the Cooked Ham up side down.

Baste Pineapple syrup/glaze all around the cooked ham.

Coat the cooked ham generously.

Turnover and baste the skin side of the cooked ham.

Also baste the pineapple sliced.

Increase the oven temperature to 180’C.

Baked the cooked ham for 30-minutes more without cover, skin side up.

Voila, Festival Ham is ready!
