Baked Mussels with Herbed Bread Crumbs

Hello everyone! Today we’ll be baking some Greenshell Mussels from New Zealand.

Frozen Greenshell Mussels is one of my favorite seafood product that I normally order onboard.

On the half shell. Farm raised.

They are nicely packed in a 1 kilo boxes, can be conveniently cooked directly from the freezer and it is ready in few minutes.

A nice piece of Parmigiano-Reggiano or Parmesan cheese.

And for this recipe we will also use Parmigiano-Reggiano, you’ll gonna love the smell of it getting baked with dry herbs and bread crumbs.

It is a perfect Warm Starter on my weekend buffet or for any special occasions onboard.

Baked Mussels with Herbed Bread Crumbs

Prep. time: 5 minutes

Cooking time: 15 minutes

Oven temp. : 200’C top and bottom heat, tray at lower 3rd rack

Difficulty: Very Easy

Makes; 32pcs. Baked Mussels

Good for 12 crew as a warm starter

You will need;

1 kg. Frozen New Zealand Greenshell Mussels (on the half shell-farm raised)

2 cups (120grms./cup) bread crumbs

1/4 cup olive oil

1/2 cup (60grms.) Parmigiano-Reggiano/Parmesan cheese, grated

4 cloves of garlic, finely chopped. Or 2 tsp. garlic powder

1 Tbsp. Sambal Oelek

2 tsp. dry oregano or my Herb Trifecta mix

1 tsp. Salt with freshly ground black pepper or my #Seasonin mix

Direction;

Preheat the oven to 200’C.

In a mixing bowl, combine all the ingredients except the greenshell mussels.

Hold a greenshell mussels on the half shell on its tip. One by one, scoop some herbed bread crumbs topping in the mixing bowl.

Transfer on a baking tray. Baked the greenshell mussels until the topping turns golden brown and crisp,
about 15 minutes if mussels are frozen and 8 minutes if defrosted or fresh Mussels.

Serve with lemon wedges on the side.

Here’s how I do it;

Preheat the oven to 200’C.

Use a large mixing bowl. Place the bread crumbs and garlic.

Add the dry oregano or my Herb Trifecta mix.

a tablespoon of Sambal Oelek.

half a cup of grated Parmigiano-Reggiano/Parmesan cheese.

and lastly, the olive oil.

Mix all the ingredients for the herbed bread crumbs until well blended.

Take the frozen Greenshell Mussels from the freezer.
No need to wash or rinse it with water. Use directly from the package.

Hold a greenshell mussels on the half shell on its tip. One by one, scoop some herbed bread crumbs topping in the mixing bowl.

Take just enough herbed bread crumbs to cover the mussels.

Transfer on a baking tray. Baked the greenshell mussels until the topping turns golden brown and crisp,
