Stoc Marcian Style Strawberry Cheesecake

Hi everyone!  Thank you so Much to all… iCookonboard.com just reached 200,000 Hits, Yay!!! Today I’ll be sharing a very special recipe. It is a classic New York style of cheesecake that I re-invent specially for Marcia.

Stoc Marcia holds a special place in my heart, I always have a good time sailing with Her. And to honor Her, I named this cheesecake specially for Marcia.

Well you’ll certainly gonna love this cheesecake! This dessert is just Heaven on board. Need I say more?

The original recipe is from Elise Bauer of SimplyRecipes.com. But I need to tweak a bit to make it a Stoc Marcian style.

Before we start,  I want you to know one important thing to achieved a delicious cheesecake. You must keep all your ingredients at room temperature 2 hours before using it,  this will ensure your cream cheese will keep its natural smoothness and delicate taste.

First we don’t have graham crackers onboard, but I got a lot of left-over danish cookies. Yeah I always save those broken pieces of danish cookies that my crew don’t like to eat, and believe me it makes a perfect crust for cheesecake.

Second I add a bit more quantity of cream cheese into the ingredients.

Third changes that I’ve done is I use my homemade Strawberry Coulis for the topping.

And lastly I top it with 12 pieces of whole fresh strawberry to give a mouth watering touch on it. Just perfect for my 12 hungry Stoc Marcian Crew.

Now on with the cooking…

Stoc Marcian Style Strawberry Cheesecake

Prep. time: 15 minutes

Cooking time: 2 1/2 hours

Cooling time: 12 hours or overnight

Oven temp. 180’C for the crust / 160’C for the cheesecake

Difficulty: Easy

Makes; 9-inch/23-cm round Classic New York Style Cheesecake (12-16 slices)

Good for 12 crew

You will need;

23-cm, 6 1/2-cm high spring form pan, lined with baking paper or parchment paper

3 pieces 45-cm X 45-cm square heavy duty aluminum foil

A high rimmed roasting tray, atleast 5-cm high

For the crust:

250 grms. Danish Cookies crumbs

125 grms. unsalted butter, melted

For the Filling:

1 kg. cream cheese, kept at room temperature.

300 grms. (1-1/2 cup) granulated white sugar

pinch of salt

1 Tbsp. vanilla essence

4 pcs. (60 grms./each) eggs, kept at room temperature.

160 ml. (2/3 cup) sour cream 24%fat, kept at room temperature.

160 ml. (2/3 cup) heavy cream 35-40%fat, kept at room temperature.

Topping:

250 grms. (1 cup) sour cream

2 Tbsp. strawberry coulis

12 pcs. fresh strawberry, hulled

Direction;

Step 1: Prepare the crust

Preheat the oven to 180’C

Place the danish cookies on a plastic bag and run a rolling pin until it turns into a fine crumbs. Or grind the danish cookies in a food processor or blender to make a fine crumbs.

Transfer in a mixing bowl and pour in the melted butter, mix until well blended.

Place the mixture of danish cookie crumbs at the bottom of the spring form pan. Use a spoon to platten the crumbs into an even layer.

Place in the oven and bake for 15 minutes. Let it cool down.

Step 2: Make the cream cheese filling

Reduce the Oven temperature to 160’C.

Place the spring form pan at the center of the aluminum foil.

Gently wrap the side of the baking pan, repeat this for the remaining 2 sheets of aluminum foil.

This is to make sure that no water will go inside your spring form pan while baking in a water bath.

Place the cream cheese in a mixing bowl, add the sugar and vanilla. Whisk until smooth adding eggs one at a time.

Then add the sour cream and heavy cream, mix for another minute or until well blended.

Pour the cream cheese filling over the crust. Use a rubber scrapper to smooth the top.

Step 3: Bake the Cheesecake

Place the springform pan inside a high rimmed roasting tray. Pour in boiling water into the roasting tray creating a water bath for the springform pan.

Pouring boiling water upto half of the spring form pan. Bake the cheesecake for 1-1/2 hour.

Switch off the oven and keep the oven door an inch wide crack open. This will allow the cheesecake to cool down very slowly avoiding the surface from cracking.

Cover the cheesecake with plastic film wrap and chill inside the fridge for atleast 12 hours or preparably overnight.

Step 4: Topping the cheesecake

Take out the cheesecake from the fridge and unwrap.

Run a dinner knife around the side of the cheesecake.

Remove the aluminum foil around the pan. Gently open the latch of the springform pan and slowly lift the side of the springform pan.

Using 2 metal spatula, gently insert it below the cheesecake crust and transfer the cheesecake into your cake stand or a flat surface serving dish.

Note: if you don’t have a cake stand, cake board or a flat surface dinner plate it is better not to take out cheesecake from the base of the springform pan. And you can also omit lining the springform pan with baking paper or parchment paper.

Place the 1 cup sour cream in a mixing bowl.

Add the strawberry coulis, whisk until smooth and well blended.

Pour half of the topping over the surface of the cheesecake.

Keep the remaining half of the strawberry-sour cream topping in a small bowl inside the fridge and take out only when ready to serve.

Gently spread the strawberry-sour cream topping on the cheesecake.

Finish it by placing the 12 pieces whole strawberries around the top of the cheesecake.

Last Step: Take a bite

Take a slice and enjoy it with a freshly brewed Zoegas coffee.
