Choco Raspberry Victory Cake

Hello everyone! Today we’ll be making a special cake that is perfect for any Victory Parties or Birthday celebrations.

I want to dedicate this cake for my brother Ian Christopher for passing his Civil Engineering Licensure examination.

Congrats Engr. Ian Christopher Imperial Almendra!!! I am so proud of you! I wish you all the best in your future endeavour.

Now on with the cooking…

Choco Raspberry Victory Cake

Prep. time: 15 minutes

Cooking time: 40 minutes

Oven temp.: 180’C

Difficulty: Easy

Makes; 1 double layer Birthday cake

Good for: 12 crew

You will need;

*For the cake;

2 cups sugar

1 3/4 cups all-purpose flour

3/4 cup unsweetened cocoa powder (Hershey’s, Cadbury or Ricoa)

1 1/2 tsp. baking powder

1 1/2 tsp. baking soda

1 tsp. salt

2 tsp. vanilla powder/liquid

2 eggs

1 cup fresh milk (or 1/2 cup evap. milk + 1/2 cup water)

1/2 cup vegetable oil

1 cup boiling water

*For the whipped cream frosting;

500 ml. whipping cream 35-40% fat content, chilled and whip until stiff peak forms. [Click here for more details.]

*For fruit toppings;

400 grms. Raspberries

100 grms. Red Currants

Direction;

Preheat oven to 180’C. Prepare a 9 x 2 inches/(23cm x 6cm) spring form baking pan, spray with cooking spray or brush with softened unsalted butter or oil. Add 2 tablespoon of breadcrumbs for each baking pan. Set aside inside the freezer while you are preparing the cake batter. {Note; keeping your baking pan frozen just before baking will prevent the “DOMING EFFECT” of the cake.}

Place all the dry ingredients in a fine sieve, sift on a large mixing bowl.

Add the eggs, milk and oil. Whisk for a couple of minutes.

Stir in the boiling water, batter will be very thin. Pour batter on prepared pan.

Bake for 40 minutes or until toothpick inserted in the center comes out clean.

Let it cool completely on wire rack. You can bake this in advance and cover it with plastic and chill for few days or freeze for a month.

Now the FUN part of it!!! Take out your nice and elegant Cake Stand or just a plate that is a bit wider that your cake.

Scoop some whipped cream into the plate. Place the 1st layer of the cake top-side-down on the plate.

Spread a layer of whipped cream on the cake. Place the 2nd layer of cake . Cover with whipped cream frosting. Use the remaining whipped cream to add decoration around the cake.

Top with fresh raspberries and red currants . Add your greetings to the party celebrant.

Place the 2nd layer of cake .

Cover with whipped cream frosting.

Use a spatula or in my case I use the plain side of a bread knife to smooth out the frosting.

Use a clean paper towel to scrape excess frosting on the side of the plate.

Use the remaining whipped cream to add decoration around the cake.
Now we're ready to put the fruit toppings.

Last week due to delayed deliveries of our provision, our captain ask me to do some local purchase at ICA Nynäshamn. And I was so thankful that my friend Kicki from the Stockholm Seaman’s Mission was able to help do the shopping.

So I grab this chance to buy some Raspberries and Red Currants… And a lot more good stuff that I will be using on my next baking adventure onboard. So please stick around.

Starting from the center, place the Raspberries until the cake top is fully covered.

Place the Red Currants around the bottom side of the cake.
