Oven Roasted Potatoes in Olive Oil and Thyme

Hello Everyone! Today is the last part of my lazy cooking series, at least for this month. =)

Previously we’ve done Oven Roasting Potatoes with Bacon Drippings.

Although bacons taste good, not everyone can eat pork. So here’s a pure vegan way of Oven Roasting Potatoes.

Now on with the cooking…

Oven Roasted Potatoes in Olive Oil and Thyme

Prep. time: 5 minutes

Cooking time: 35 minutes

Difficulty: Very Easy

Good for 4 European crew

You will need;

1 kg. potatoes, russet burbank potatoes or delicatesspotatis of Sweden.

1 tsp. #Seasonin

1 tsp. dry thyme

2 Tbsp. olive oil

Direction;

Preheat the oven at 220’C

Wash the potatoes in running water and scrub out any soil from the skin.

Cut into half lenghtwise. Place the potatoes into a mixing bowl.

Add #Seasonin, dry thyme and olive oil. Mix until the potatoes are well coated with olive oil.

Transfer potatoes into the baking tray. Arrange each potatoes cut side up.

Place the baking tray at the lower third rack of the oven.

Baked for 35 minutes or until nicely browned.

Serve warm with your favorite dish.

Here’s how I do it;

The potatoes will be using for this recipe are “Delikatesspotatis” they are the small ones from Sweden.

Wash the potatoes in running water and scrub out any soil from the skin.
Cut into half lenghtwise.

Place the potatoes into a mixing bowl. Add #Seasonin,

… add dry thyme.

and olive oil.

Mix until the potatoes are well coated with olive oil.

Transfer potatoes into the baking tray.

Arrange each potatoes cut side up.

Baked for 35 minutes or until nicely browned.

Tips from a Cookonboard : I highly recommend you to line your roasting tray with aluminum foil and parchment paper. This will save your time, effort and above all, fresh water onboard. Specially if you are working on a small vessel that doesn’t have a fresh water generator.
