Digong’s Sinigang na Salmon sa Sampalok

Hello everyone!!! And we already survived half of 2016.

It’s nice to be back writing and posting again, with a good  ineternet connectivity here at Slite, Sweden.

So today we’ll be making an unusual Filipino soup. We Pinoys love Sinigang sa Sampalok but we don’t have Pink Salmon in the Philippines, as far as I know. But here Onboard we have it some times. And my crew loves this Salmon soup with tamarind.

And to commemorate the 1st day of leadership under President Rodrigo “Digong” Duterte, I named this soup after him. I see a lot of similarity of Pres. Digong into a life of a Salmon, but that is a different story!

I just wish our new President will lead up all up-stream against all odds for a better Philippines.

Now on with the cooking…

Digong’s Sinigang na Salmon sa Sampalok

Prep. time: 15 minutes

Cooking time: 30 minutes

Difficulty: Very Easy

Makes: 5 liters of Fresh Salmon Soup in Tamarind

Good for 12 crew

You will need;

1 kg. Pink Salmon, head and tail. Descaled and cut into chunks.

5 ltrs. boiling water

250 grms. yellow onions, coarsely chopped

500 grms. fresh tomatoes, cut into wedges

1 pkt. (40grms.) Sinigang Mix Powder

*Optional – fresh lemon/kalamansi juice.

3 pcs. green chilli long

400 grms. white radish, peeled and sliced

200 grms. eggplant, cut into chunks

200 grms. french beans

250 grms. iceberg lettuce

Salt and fish sauce to taste.

Direction;

Prepare all ingredients needed.

On a large soup pot, place it on very high heat and bring water to a boil.

Add the onions and tomatoes. Bring it back to a boil and lower heat to simmer with cover crack open.

Let it cook for 20 minutes or until tomatoes are very soft.

Pour in the Sinigang Mix Powder. Add some lemon juice to your desired taste.

Add the green chilli long and white radish, let it cook for 5 minutes.

Add the eggplant and french beans and let it cook for 3 minutes before adding the Pink Salmon.

Add the Pink Salmon, let it cook on very low heat.

Season with salt and if you wish to add some fish sauce to taste.

Add the iceberg lettuce just before serving.

Serve hot with warm steamed rice.

Here’s how I do it;

Taking Care of Fresh Salmon…

We recieved at Gdansk,Poland – 8.91euros/Kg.

Before freezing always cut the Fresh Salmon into your desired size or weight.
It will be easier for you when you need it.
The Head and Tail for the soup and the Body for steaks and fillets.

Place it back on it’s box and cover with plastic before freezing.
You can only do this for Fresh Salmon, so don’t let the opportuny pass. This will only takes you 5 minutes to do.

 

Prepare all ingredients needed.

let it cook for 5 minutes.

Add the eggplant and french beans.
*Today I use frozen cut beans because I don’t have fresh french beans.
You can also add 200grms. fresh or frozen whole okra/lady finger to this soup.

Let it cook for 3 minutes before adding the Pink Salmon.

Add the Pink Salmon, let it cook on very low heat.

You can add a little more lemon juice to your desired sourness of your Sinigang.
You can also add Sinigang Mix Powder or even better the real sour tamarind fruit, if available.

Season with salt.

Season with salt and if you wish to add some fish sauce to taste.

Onboard, we don’t have kangkong so I use the outer part leaf of the iceberg lettuce.
I normally use 6pcs. outer leaves of iceberg lettuce which weights aroung 250grms.

Cut it into large pieces.

Add the iceberg lettuce just before serving.

Serve hot with warm steamed rice.
