Happy Sunday Everyone!!! Its not usual that I write and post on Sundays, but today is a very especial day to all the Super Dads around the globe and in heaven as well !!!

And this recipe of Menudo reminds me of my Dad. During his time “Father’s Day” was unheard of, but my Dad never miss to celebrate all our family occasions. He was always excited to prepare a party, By the way, my Dad is a professional butcher. So he knows what and where to get the best meat for his dishes. I usually watch him while he cooks, normally he talks to me while he’s cooking.

Somehow he wants me to learn his cooking skills. Now I know why, and I thank you Dad for sharing your knowledge to me. I never thought I can make a living out from everything that you teach me.

Now on with the cooking…

Pork Menudo

Prep. time: 15 minutes

Cooking time: 60 minutes

Difficulty: Easy

Good for 12 crew

You will need;

750 grms. boneless pork shoulder, cut into cubes

250 grms. pork liver, cut into cubes

6 cloves garlice, peeled and minced

150 grms. onions, cubes

2 pcs. bay leaves

4 Tbsp. cooking oil

2 Tbsp. fish sauce

4 Tbsp. soya sauce

1 Tbsp. sweet paprika powder

1 can 400grms. peeled tomatoes, cut into cubes

1 ltr. pork soup stock or water

250 grms. potato, diced

250 grms. carrots, diced

250 grms. hotdogs/vienna sausage, sliced 1cm round

250 grms. red bell peppers, diced

1 cup green peas

1/4 cup raisins

1 Tbsp. sugar

Salt and freshly ground black peppers

Direction;

Prepare all ingredients needed.

Heat oil on a large cooking pot. Saute the garlic, onions and bay leaves until fragrant and onions are translucent.

Add the pork and stir until it changes in a pale color. Pour in the fish sauce and soya sauce, stir just to combine the flavour.

Cover the cooking pot with lid for a couple of minutes or until the liquid is drying up.

Add the sweet paprika powder, stir to coat the pork evenly.

Add half of the soup stock, adding the remaining stock later on if the pork is still tough.

Bring it to a boil and simmer with cover on slow heat for 30 minutes or until pork is just tender.

Pour in the mashed peeled tomatoes. Add the diced potatoes and carrots, let it cook on medium heat with cover.

Just when the potatoes and carrots are tender, add the pork liver. Add more pork soup stock or water if neccesary.

Add the bell peppers, green peas, raisins and hotdogs/vienna sausage.

Now that everything is cooked, bay leaves can be removed and discard.

Add the sugar. Season with salt and freshly ground black peppers.

That’s it, Voila!!! We’re finally done we our Pork Menudo.

Transfer in a large serving dish. Serve warm with hot steamed rice.

Here’s how I do it;

Prepare all ingredients needed.

I normally use Boneless Pork Shoulder or we call it Kasim in Filipino.

Sometimes if Kasim is not available onboard, I also use Boneless Pork Belly, Boneless Pork Neck or Boneless Pork Leg.

Heat oil on a large cooking pot.

Saute the garlic, onions and bay leaves

Saute until fragrant and onions are translucent.

While your pork is simmering, prep your peeled tomatoes.

I use a 400grms. tinned peeled tomatoes.

Place peeled tomatoes in a bowl.

Mashed with your hands.

After 30 minutes and the pork is just tender.

Pour in the mashed peeled tomatoes.

Add the diced potatoes and carrots,

… let it cook on medium heat with cover.
