Fresh Mushroom Soup

Hello everyone! Today we’ll be making a very simple soup loaded with a lots of nutritional value that our body needs everyday.

It is believed that this humble white button mushroom has as much anti-oxidant properties as its more expensive rivals,

the maitake and the matsutake mushrooms – both of which are highly prized in Japanese cuisine for their reputed health properties

including lowering blood pressure and their alleged ability to fight cancer. Wow, now you know you should consider button mushroom in your diet.(Source:sciencedaily.com)

The best thing is button mushrooms are available in all places, all year round! These type of mushroom are very cheap, I normally order 3 kilos which is good for our 2 weeks provision onboard a 12 crew vessel.

Now on with the cooking…

Fresh Mushroom Soup

Prep. time: 10 minutes

Cooking time: 45 minutes

Difficulty: Very Easy

Makes; 5 liters

Good for 12 crew

You will need;

1 kg. fresh button mushrooms, thinly sliced

500 grms. onions, diced

500 grms. potatoes, diced

8 Tbsp. olive oil

4 ltrs. chicken soup stock or water

Salt and freshly ground black pepper to taste

Freshly chopped parsley to garnish

Serve with sour cream

Direction;

Heat the olive oil on a large soup pot. Saute onions for few minutes until lightly browned.

Add the sliced mushrooms, stir for 10 minutes or until its juice had dried up. Add the diced potatoes and pour in the soup stock.

Bring it to a boil, cover and lower heat to simmer for 30 minutes. Season to taste with salt and freshly ground black pepper.

Garnish with parsley and serve with sour cream on the side.
