Quick and Easy Birthday Cake

I’m glad that today Jesus my God had been so nice to me and finally He gave me the meaning of my very existence.

I celebrate this day as the beginning of the next chapter of my life. And since I know why I am here, I have no fear to face the future…


 

As far as I can recall, my Mom never forget to bake a birthday cake on our special day. And now that it’s my turn to continue this wonderful tradition. I only need to tweak a bit the recipe to make it more easy and faster. My Mom use to cover the cake with a thick choco-fudge which take at least 30 minutes to prepare. Now I normally cover my cake with whipped cream, it only takes a couple of minutes and your ready to use it.

I remember many years ago when I was a young 2nd/cook on the World’s Largest Built Ship -T/T Sea Giant, I make a cake to one of the Able-bodied seaman, He was crying while blowing the candles. I asked him whats wrong, is it the cake? Didn’t you like it? It take a few minutes before he get his self altogether and explain why he is crying.

He then told us his story, “I grew in a village far from the city.” As he begun his story.  “My family was very poor that none of us had ever had a cake during our birthdays. All we have is a candle that we stick to the freshly cooked rice while my love ones are singing, I silently utter my wishes before I blew the candle. One of my wishes is to have a real birthday cake on my next birthday. Today, that wish is granted.” He then thank me for making his wish come true.

Since then, I make sure that each and every crew member that is celebrating their birthdays onboard will get a birthday cake. A simple Birthday Cake to remember!

Now on with the cooking…

Quick and Easy Birthday Cake

Prep. time: 15 minutes

Cooking time:  40 minutes

Difficulty: Easy

Makes; 1 double layer Birthday cake

Good for: 12 crew

You will need;

*For the cake;

2 cups sugar

1 3/4 cups all-purpose flour

3/4 cup unsweetened cocoa powder (Hershey’s, Cadbury or Ricoa)

1 1/2 tsp. baking powder

1 1/2 tsp. baking soda

1 tsp. salt

2 tsp. vanilla powder/liquid

2 eggs

1 cup fresh milk (or 1/2 cup evap. milk + 1/2 cup water)

1/2 cup vegetable oil

1 cup boiling water

*For the whipped cream frosting;

500 ml. whipping cream 35-40% fat content, chilled and whip until stiff peak forms. [Click here for more details.]

*For fruit toppings;

A fresh fruit that is available. Strawberries, Raspberry, Blueberry or Kiwi.

Direction;

Preheat oven to 180’C. Prepare a 9 x 2 inches/(23cm x 6cm) spring form baking pan, spray with cooking spray or brush with softened unsalted butter or oil. Add 2 tablespoon of breadcrumbs for each baking pan. Set aside inside the freezer while you are preparing the cake batter. {Note; keeping your baking pan frozen just before baking will prevent the “DOMING EFFECT” of the cake.}

Place all the dry ingredients in a fine sieve, sift on a large mixing bowl.

Add the eggs, milk  and oil. Whisk for a couple of minutes.

Stir in the boiling water, batter will be very thin. Pour batter on prepared pan.

Bake for 40 minutes or until toothpick inserted in the center comes out clean.

Let it cool completely on wire rack. You can bake this in advance and cover it with plastic and chill for few days or freeze for a month.

Now the FUN part of it!!! Take out your nice and elegant Cake Stand or just a plate that is a bit wider that your cake.

Scoop some whipped cream into the plate. Place the 1st layer of the cake top-side-down on the plate.

Spread a  layer of whipped cream on the cake. Place the 2nd layer of cake . Cover with whipped cream frosting. Use the remaining whipped cream to add decoration around the cake.

Top with fresh fruit.  Add your greetings to the Birthday celebrant.

500ml. of whipping cream will double its amount after whipping.
500ml. is just enough to cover this cake.

Use a clean paper towel to scrape excess frostin on the side of the plate.
