Egg Salad on Toast

Today I’m introducing a series of Salad on Toast which will go in the Cold Appetizer category.

1st is the “Egg Salad on Toast”, then its two siblings the Chicken Salad on Toast and Tuna Salad on Toast will follow soon after I’ve completed the photo-procedure.

Egg Salad on Toast is a great way to recuperate your leftover Hard Boiled Eggs from breakfast and the bread loaf that has been sitting on your bread basket for a couple of days. And this will give an instant face-lift to your buffet table.

Most Europeans like to start their meal with a Cold Appetizer/Starter. And some times if they really like your starters, they will skip the main course.

And that’s a big saving on your food budget. Honestly, most of my crew ask me how do I manage to serve expensive meals such as Tiger Prawns, King/Queen Crabs, Smoked Salmons and Beef Tenderloins that they normally can’t get from other cooks onboard.

One of the main reason is serving cold or warm appetizer/starters. If you can manage to recuperate a leftover into a clean, hygienic and pleasing new dish. Then you will NEVER have to worry about food budget onboard.

Egg salad is normally used as a sandwich spread and also often used to top green salad.

Now on with the cooking…

Egg Salad on Toast

Prep. time: 10 minutes

Cooking time: 10 minutes

Difficulty: Very Easy

Makes; 500 grms. Egg Salad (Enough to fill 12 toast)

Good for 12 crew

You will need;

6 pcs. med sized (60grms./each) hard boiled eggs, shelled, finely chopped

100 grms. red onions, finely chopped (about 3/4 cup)

60 grms. (about 1/4 cup) sweet pickle relish or finely chopped celery

2 tsp. sugar

2 Tbsp. mayonaise

Salt and freshly ground black pepper to taste.

6 pcs. stale brown or white bread, cut into half diagonally.

Spreadable table margarine or unsalted butter

Iceberg lettuce, cut to fit the shape of the bread.

Garnish with fresh dill or parsley

Direction;

If you don’t have leftover hard boiled eggs, click here! Then you need to cool it down before using.

Place the first 6 ingredients in a mixing bowl. Mix until well blended.

Keep aside in the fridge while preparing the toast.

Lightly toast the bread in a bread toaster or inside the oven at 220’C for 3 minutes.

Spread some margarine or butter. Put the lettuce and let it sit on top of the margarine/butter.

Form 3 tablespoon ball of Egg Salad and place it on the lettuce. Garnish with fresh dill or parsley.

*Note: Egg salad can spoil if not refrigerated. Always keep inside the fridge and take out just before serving.

Place the first 6 ingredients in a mixing bowl. Mix until well blended.

Finely chopped boiled eggs, red onions and sweet pickle relish or minced celery.

Add the sugar.
Egg Salad on Toast
When putting the Mayonaise, keep in mind that you only need a small amount to bind the rest of the ingredients.
Adding more will make your Egg Salad runny and its hard to make it into a ball.

Add salt and freshly ground black pepper to taste.

Mix until well blended.
Keep aside in the fridge while preparing the toast.

Its a Toast
Prepare 6 pcs. stale brown or white bread.
Its a Toast
Cut into half diagonally.
Its a Toast
Lightly toast the bread in a bread toaster or inside the oven at 220’C for 3 minutes.

Spread some margarine or butter.
Its a Toast
Put the lettuce and let it sit on top of the margarine/butter.
Egg Salad on Toast
This what happen when I put a lot of mayonaise into the Egg Salad.
It is too runny and I can not form it into a pleasing chunk of Egg Salad ball.
Egg Salad on Toast
Form 3 tablespoon ball of Egg Salad and place it on the lettuce.
Garnish with fresh dill or parsley.

      It’s been awhile! But nice to hear from you again. I write whenever I’m free, that’s includes Now, Our Coffee Break and at night before I go to rest. I just wish I have a ghost writer who can help me.
      Cooking ang shooting photos is easy but writing is is really bloody!
