Choco Strawberry Cupcakes

These goodies are quick and easy to make. But still they are simply irresistable.

This recipe is something you can keep in your pocket and can be use in case of emergency.

As a Cook Onboard I’m also the Mom of all my crew. Making sure that I know each and everyone’s birthday.

I check the crewlist to know who’s the next birthday celebrant.

I can plan and bake the cake ahead of time, then I wrap and freeze the cake.

Taking it out on the special day to put the icing and add finishing touches.

But in a very rare occasion, someone will join onboard and say to you that today is his/her birthday.

So I’m like; “Okay, Happy Birthday! Did you bring some cakes for us?” He was like;” Ah…ummm…No, but I brought some candies!”

Now these are times that you can take out this recipe. And also bring a lot of flexibility with it.

For you already know that you need to find time and squeeze it in a ton of other things that is needed to be done.

But nothing is impossible onboard! So lets do this…

Now on with the cooking…

Choco Strawberry Cupcakes

Prep. time: 10 minutes

Active time: 15 minutes

Cooking time: 20 minutes

Oven temp.: 180’C

Difficulty: Easy

Makes; 24 pcs. cupcakes

Good for 12 crew

You will need;

2 cups sugar

1 3/4 cups all-purpose flour

3/4 cup unsweetened cocoa powder (Hershey’s, Cadbury or Ricoa)

1 1/2 tsp. baking powder

1 1/2 tsp. baking soda

1 tsp. salt

2 tsp. vanilla powder/liquid

2 eggs

1 cup fresh milk (or 1/2 cup evap. milk + 1/2 cup water)

1/2 cup vegetable oil

1 cup boiling water

*For the frosting/icing and toppings;

250 ml. whipping cream 35-40% fat content

6 pcs. strawberry, washed and quartered

Direction;

Preheat oven to 180’C. Prepare two 12-holes muffin/cupcake baking pan, line with muffin paper cups.

Place all the dry ingredients in a fine sieve, sift on a large mixing bowl.

Add the eggs, milk and oil. Whisk for a couple of minutes.

Stir in the boiling water, batter will be very thin. Pour batter on prepared muffin paper cups.

Bake for 20 minutes or until toothpick inserted in the center comes out clean.

Let it cool on wire racks for few minutes and transfer to freezer to totally cool it down while you are preparing the frosting and the strawberry toppings.

Whip the whipping cream, place it in a icing/piping bag with your prepared design. {click here to learn How to Whip Whipping Cream}

Add the frosting to each Choco Cupcakes and top with sliced strawberry.
