Bread Butter Pudding

One of the main things you should keep in mind when cooking onboard is the Budget. Every ship has it!

Even your company says there’s no limit in ordering your provision… Believe me, there’s always a budget!

And that is up to you on how you manage your budget. “Oh my, I’m talking to myself again!”

One of the best way to save your budget is recuperating your leftovers into a new dish. White sliced bread is on top of the list of leftovers. There’s quite a lot you can do into it. You can make Croutons, Pinoy Tasty Pizza and of course the super yummy Bread Butter Pudding.

This recipe I learn from Chef Ronnie Legaspi while I was his messman onboard the World’s largest built ship T/T Sea Giant. I’m very fortunate to have worked with one of the best Chef in the maritime industry. And I’m also proud to be one of the youngest 2nd/cook of a very historical vessel.

Well thats enough for now, I talk too much… Okay, let’s do some baking!

Now on with the cooking…

Bread Butter Pudding

Prep. time: 30 minutes

Cooking time: 60 minutes

Oven temp: 180’C

Baking Tray: 36 x 26 x 10 cm (or any baking tray with at least 4 liters capacity)

Difficulty: Very Easy

Makes; 24 slices

Good for 12 crew

You will need;

1 loaf (20 slices/750grms.) white sliced bread

2 Tbsp. unsalted butter, softned at room temp.(to greased the baking tray)

12 (60g/each) fresh whole eggs

1/2 cup white granulated sugar

1 can (397g.) condensed milk

1 can (410ml.) evaporated milk

1 tsp. vanilla powder/liquid

*Optional;

1/4 cup roasted nuts (almonds, cashew or peanuts)

1/4 cup raisins

Toppings;

6 Tbsp. unsalted butter

2 Tbsp. white granulated sugar

Direction;

Preheat the oven to 180’C

Melt 2 Tbsp. unsalted butter in the baking tray.

Arrange the sliced bread layer by layer.

Add the roasted nuts and raisins. Cover with one more layer of sliced bread. Set aside.

Place the eggs, sugar, condensed milk, evaporated milk and vanilla in a mixing bowl.

Mix with a wire whisk until sugar is dissolved. Pour the egg and milk mixture into the baking tray.

Keep aside for 15 minutes to evenly soak the bread with the egg and milk mixture.

Top with sliced unsalted butter and springkle with sugar.

Place in the oven and bake for 60 minutes.

Note: Oven is heated top and bottom at 180’C. Bake for 45 minutes without cover on until golden brown. Then cover with aluminum foil for 15 minutes more.

Let it cool down completely. Slice into your desired sizes.

Here’s how I do it;
