Maja Corn

This recipe I learn from my Mom which she learn from her Auntie. I love this recipe, it’s very simple and ingredients are easy to find onboard. Maja Corn is also known as Maja Blanca with corn or Maja Mais, it is a famous filipino dessert but you can also enjoy it as a snack.

Now on with the cooking…

Maja Corn

Prep. time: 10 minutes

Cooking time: 20 minutes

Difficulty: Very Easy

Makes; 24 slices from 1 dish tray (34x24x5cm / 3ltrs cap.)

Good for 24 crew

You will need;

2 can (400grms/can) Sweet corn kernel {drain weight is 22o grms/can}

400 grms cornstarch/cornflour, dissolved  in 3 cups water.

2 can (400 ml/can) coconut milk, add water to make 8cups.{or 8cups 2nd extract of fresh coconut milk}***

3 cups granulated white sugar

1 can 400 ml coconut milk {or 2cups 1st extract fresh coconut milk}***

***If you are using fresh coconut milk, grated 2 medium size old coconut. 1st extraction is pure coconut milk extract. 2nd extraction is obtain by adding warm water to the grated coconut after getting the 1st extraction.

FOR THE TOPPING (Budbud);

1 cup dessicated coconut {or grated fresh coconut, after you extract the coconut milk from it.}

3 Tbsp. white or light brown sugar

Direction;

On a blender, put 1 can sweet corn kernel. Liquify on high speed for 30 seconds.{or you can substitute 1 can Sweet Corn Cream Style if blender is not available.}

Place on very high heat a large cooking pot {atleast 6ltrs. cap.}, pour the 8 cups 2nd extraction coconut milk. Add the 3 cups granulated white sugar. Add 1 can Sweet corn kernel. Pour in the liquified sweet corn kernel. Whisk to dissolved sugar and bring the mixture to a boil. Pour in the cornstarch mixture while constantly stirring with a whisk.  The mixture will become very thick instantly. When it start to boil again, add 1 can pure coconut milk. Remove from heat, continue stirring until pure coconut milk is well blended to Maja Corn mixture. Transfer while still hot.

Transfer on a dish/tray with 3 liters capacity. ( 34x24x5cm rectagular glass dish or a 13x9x2 inches baking tray) Use a rubber spatula to scrape out the Maja Corn from the cooking pot and to flatten the surface of Maja Corn on the dish/tray. Let it cool, cover with plastic wrap and refrigerate for few hours or overnight to become solid. Run a knife around the side of the dish/tray and slice the Maja Corn to your desired sizes.

FOR THE TOPPING (Budbud);

Place dessicated coconut and sugar on a non-stick pan. Cook on very high heat, constantly stirring until golden brown. Remove from heat and transfer to a bowl immediately.{Note:keeping the “Topping/Bubud” on the pan will burn it from the remaining heatof the pan.}

Serve Maja Corn with Budbud on top.
