Brownies for Christmas

I was so excited to see my kids helping me bake some brownies for Christmas. And finally I got the chance document it for others to enjoy it too. Actually, alot of my collegue onboard is consistently asking me about the recipe. One of them is Chief Engineer Arnis Peterhofs from Latvia, he’s addicted to Brownies. And lately my sister in law  is asking me for a recipe of it, so this one is for you Ate Daisy. =)

Now on with the cooking…

BROWNIES

Prep. time: 10 minutes

Cooking time: 20-25 minutes

Difficulty: Very Easy

Makes; 24 square pcs.

Good for 12 crew

You will need;

1 cup (250grms) unsalted butter or baking margarine, keep at room temp. to soften.

2 cups (500grms) granulated white sugar

2 tsp. vanilla

4 pcs medium (60g/each) fresh eggs

1 cup (125grms) plain/all purpose flour

2/3 cup (70 grms) cocoa powder

1/2 tsp. baking powder

1/2 tsp. fine salt

(Optional; 1 cup cooked/roasted chopped nuts. -walnuts, cashew, almonds or peanuts)

*For decorations; candy sprinkles.

Your personal choice of cookie cutters.

12 inches (30cm) square pan, brush with soften butter or spray with a cooking spray.

Direction;

Preheat oven to 180’C (350’F) . Keep your greased square pan ready.

Place the softened butter and sugar on a large mixing bowl, use a whisk to mix until smooth. Pour in the vanilla.   Add eggs one at a time, stirring in every addition until creamy.

On a seperate mixing bowl, mix all the dry ingredients (flour, cocoa powder, baking powder and salt).

Use a rubber scrapper to fold in the dry ingredients to the butter mixture. Don’t overmix, about 24 strokes is enough.

(Optional; add the nuts and give a few more stir to blend properly.)

Spread the batter evenly to the greased square pan. Baked for 20-25 minutes.

Use a toothpicks to check for doneness. insert it on the middle and if it comes out clean then it is cooked and ready. Let it cool before cutting. You can simply cut it into square or triangle, but it you have a wife and 3 kids like me who is willing to join the fun then cut your brownies into christmas inspired cookie cutters and decorate it with your favorite candy sprinkles.

I bet nothing will left on your plate on Christmas Day…

Here's a sample of a brownies without nuts. I need to make one more tray of brownies without nuts for my wife Thetzy. You can cut it into square or triangle.

But since its Christmas, we should make a little more effort for our guest. I use a cookie cutter that I bought from Nynäshamn, Sweden.

Carefully take out the brownies from your cookie cutters.

Place it on parchment/wax paper. I've cut-out 14 pcs on a 12in square brownies.
