Avicii’s Roasted Pork Ribs

September-2013 was a very successful month for my blog, breaking all the records of my previous months.

So I decided to wrap it up with one of the most favourited Pork Dish I served to my crew.

And I also recently named it to “Avicii” my favourite Swedish DJ. His song “WAKE ME UP” really make a big impact on this dish,

I use to roast this pork ribs and checking it out occasionally which is unneccesary.  Actually, opening the oven during the roasting duration will just suspend it’s cooking process thus adding you with more effort and cooking time.

The best way to go if you’re serving this dish for dinner is intentionally throwing the pork ribs inside the oven just before you take your siesta, set your timer to 2hours to “WAKE YOU UP”.  Back to work, take out your Avicii’s Roasted Pork Ribs from the oven. Serve and enjoy your meal 😉

Avicii’s Roasted Pork Ribs

Prep. time: 15minutes

Cooking time: 5minutes {Caramelized Pork Ribs in medium heat on a pan.}

Baking time: 2 hours

Oven temp: 150’C

Difficulty: Very Easy

Good for 12 hungry crew

You will need;

12 big chunks Pork baby-back ribs {about 250grms/each. 2 Rib bones in each chunk}

Marinade;

3 cups sugar {Light brown or even white will do}

3 Tbsp. #Seasonin

1 Tbsp. garlic granules/powder

1 Tbsp. cummin powder

1/2 Tbsp. cinnamon powder {*optional!}

3 Tbsp. sambal oelek or 1 1/2 Tbsp. chilli powder

small amount of cooking oil to coat pan for frying ribs

Garnish with freshly chopped spring onions.

Direction;

Mix all together the marinade, rub it to your pork ribs.

Transfer pork ribs in a baking tray, cover with aluminum foil.

Roast for 2 hours at 150’C.

Take out roast, transfer to serving dish.

Strain drippings from the baking tray, pour it over the roast.

Add garnish, serve and enjoy your meal 😉

Here’s how I do it;

Now for my favourite spice... Add the Cinnamon powder. "I'm a sucker on this one" ;)

With all ingredients assembled, we are now ready to rumble.

Return it to baking tray.  Wish you dont forget to heat-up the frying table and pre-heat the oven as well.

Use a clean galley/kitchen paper towels to spread the oil to the Frying table.

With Frying table heat set at medium-high heat.

Use a tong to turnover each ribs and fry it for a couple of minutes more.

Don't let the sugar burn, the taste of burnt sugar is not good and the color is not appealing.

Transfer it back to the same baking tray.

Throw it inside the 150'C preheated oven.  Set your timer to 2hours!!! Enjoy your Siesta!!! :D

NOTICE: I already try this setting and time duration so many times. In rare occasion you might need to add more time to the cooking duration if the meat is not yet tender. But never increase the oven temperature, thus this will only burn your sugar/marinade and all your hardwork will be wasted and your crew unhappy.
