Swedish Pancakes

“Dinner is better than Life for it always ends up with a sweet Dessert!”

That’s what my colleague onboard M.T. STOC MARCIA always say whenever I serve a dessert on dinner.

Swedish always have a sweet life on a thursday’s dinner, this is to complement their traditional soup “Ärtsoppa”.

Onboard a Swedish ship I also cook and serve Ärtsoppa & Pancakes every thursday dinner.

All crew are looking forward to this thursday dinner treat. Scandinavians are the most excited on this one.

Swedish Pancakes

Prep. time: 10 minutes + at least 2 hour chilling inside the fridge 4’C

Cooking time: 2 minutes on each side

Difficulty: Easy

Makes; 3ltrs. Pancake batter/ 40 Swedish Pancakes

Good for 12crew

You will need;

12 med.size(60g) fresh eggs

1 tsp. fine salt

4 Tbsp. white sugar

2 tsp. vanilla liquid

2 ltrs. fresh milk {atleast 3%fat} or 2x410grms(384ml) evap.milk & add water to make 2ltrs.

500 grms. (4cups) plain flour {all-purpose flour}

For frying;

Butter{unsalted}-quantity defends on the size of pan you will use.

I recomend a non-stick pan for best result, although onboard I use an “Industrial Frying Table” to make my job easier.

Toppings;

500 ml. whipping cream {atleast 35%fat} use a chilled electric egg beater/mixer, whisk for a minute or until stiff peak form.

Jam of your choice. {Swedish choice is Raspberry, Cloudberry and Strawberry jams.}

-Optional fresh mint to granish.

Direction;

On a large mixing bowl, whisk all ingredients together.

Cover with plastic film wrap and let it rest in the refrigerator for atleast an hour.

Heat your pan on Med-High Heat, add butter just to coat the surface of the pan.

Pour Swedish Pancake batter on the pan, just enough to make a thin layer.{a bit thicker than crepes}

Fry it for 2minutes on each side. Transfer on a serving dish or plate.

Add toppings, serve and enjoy your meal 😉

Here’s how I do it;

NOTE:
You can divide this recipe into half or quarter for smaller quantity needed.
I will post another Swedish Pancake cooked @ home with the help of my Daughter Jenin. That will be after 2months from now, when I take my vacation.
