Macaroons around the world differs by ingredients and taste. This recipe I got from one of my “COOKING HEROES”, my –Mommy Bing. We are proud to say that this is our PHILIPPINE MACAROONS!!!
And just for the record… Today is friday! Actually its “Friday The 13th”!!!
My eldest daugther Jenin told her mom that friday the 13th is bad luck for her. My wife ask her why? Jenin told her that she loses some POGS to her classmate. Aha!!! So thats what my kids is doing at school… Gambling instead of studying!
But on the otherhand, back in our days, we use to bet real money. Nice to know that my kids are not as bad as their dad. 😉 Wish they dont follow my footstep, I was kick-out when I was on 8th grade. 😦
Okay, so much about me…

Now on with the cooking…
Coconut Macaroons
Prep. time; 10minutes
Baking time; 30-35minutes
Difficulty: Very Easy
Makes; 24pcs. muffin cups
You will need;
500 grms dessicated coconut
1 tin (397grms) sweet condensed milk
1 tin (410grms) evaporated milk
½ cup sugar
½ tsp. Baking powder
4 pcs. (60grms/each) fresh eggs
1 tsp. vanilla liquid
Direction:
Preheat oven to 165’C / 350’F
Mix all ingredients, scoop 4Tbsp. of mixture to each muffin paper cups.
Bake for 30-35minutes or until golden brown.
Serve it warm or cooled.

If you are still in germany then we must have the same time zone. I most be sleeping too. Actually I was already sleeping when we got this FIRE ALARM from the powerpack room, thank God its a false alarm, but its already hard to go back to sleep. =(
