Apple Cinnamon Cake

I hate the 31st of every month that ends in it. It’s the only day you need to work for nothing. And August is the second consecutive of each year. Febuary is on top of my favorite months, its the only month that you only work for 28days{29 in leap years} but still get a 30days salary 😎

But today is my cousin’s special day,

“Happy Birthday Rhea !!!”

If not for Rhea, I may as well hate this day. So this post is really intended for you my cousin, wish you enjoy your special day with your 2boys{Bryan & Nigel}.

Apple Cinnamon Cake

Prep. time: 15 minutes

Baking time: 30-35 minutes

Oven temp.: 180’C/350’F/Gas mark #4

Baking tray: 13x9x3 inches

Makes: 24 pieces
You will need;

3 medium (60g) fresh eggs
3 cups sugar

½ cup (125g) unsalted butter, melted
300 ml fresh milk, add to melted butter
1 tsp. vanilla

3 cups (125g/cup) all-purpose/plain flour
2 Tbsp. baking powder

* For the cake topping;
3 pcs apples {red/green} peeled and slice thinly
1 tsp. cinnamon powder
1 Tbsp. sugar

Direction;
Preheat the oven. Prepare baking tray, grease and floured {or use bread crumbs instead of flour}.

On a large mixing bowl, beat eggs and sugar until smooth and creamy. Pour in the melted butter,milk and vanilla mixture. Whisk for 30 seconds.

On a separate bowl, mix the flour and baking powder.  Add the dry ingredients mixture to the liquid mixture, stir generously until well blended.

Pour the batter mixture into prepared baking tray.

Carefully top it up with sliced apples, dust with cinnamon powder and sprinkle with sugar.

Baked for 30-35 mins. Let it cool & cut to your desired sizes.
