Pasta alla Boy

Pasta alla Boy is a street pasta that I tasted once on Nikki’s home {she’s my wife’s nephew} and her hubby “Boy” cooked it for us. Never got the chance to ask for it’s recipe but instinctively find my way to develop the perfect taste of the pasta,  although I add some ingredients to enhance it’s taste. Still “Boy” deserves to be credited to this fine dish.

This pasta recipe is so easy to prepare and cook, so gather all the ingredients and put some nice party music to set your mood ‘coz we’re gonna start to party now 😉 Avicii & Nicky Romero’s “I could be the one” is playing on to set my mood on this one…

Now on with the cooking…

Pasta alla Boy

You will need;

500 grams pasta spaghetti, cooked according to package instructions
2 Tablespoons olive oil
3 cloves garlic, crushed and chopped
1 medium (150g) onion, chopped to small cubes
1 medium (150g) tomato, chopped to small cubes
100 grams fresh button mushrooms, slice thinly {if fresh not available use 200g (1½cup) tinned sliced mushroom instead}
1 can (200g) tuna flakes in oil
1 teaspoon #BOOP mix {a mixture of dried Basil, Oregano and Parsley}
24 pieces pitted black and/or green olives, sliced
Salt & freshly ground black pepper or #Seasonin to taste
A handful of freshly chopped parsley


Gather and prepare all the ingredients needed.
On a large pot, bring enough water to a boil, add pasta and cook  al dente. “Please dont overcook the pasta, that’s the worst thing you can do to it!”
While the pasta is cooking, heat a large cooking pot on very high heat.
Sauté onion and garlic on olive oil, stir in tomato and mushrooms for 2minutes. Add tuna flakes, #BOOP mix, most of the sliced olives and ½ of the parsley.
By this time, the pasta must be cooked al dente already. Drain pasta on a colander or a large strainer. Add the pasta to the cooking tuna mushroom sauce. Mix pasta to blend sauce.
Add Salt & freshly ground black pepper or #Seasonin to taste. Transfer to serving dish.
Garnish w/ remaining sliced olives and parsley.
