Inlagd Gurka (Swedish Pickled Cucumber)

This simple Swedish dish is almost always found on every tables of Scandinavian countries. The funny thing is it’s also a Filipino dish, the Swedes must have copy it from us. 😉
The cucumbers is thinly sliced and marinated in a sweet tangy combination of sugar and vinegar. It is served as a complement to Swedish Meatballs and Mash Potatoes.
In the Philippines it is served with crispy fried fish{Tilapya,Daing na Bangus or Lapu-lapu}, grilled pork bellies or any fish or meat cooked in a charcoal grill. It’s ubiquitous in every beach outing of the Filipinos.

You will need;

800g (3-4pcs) fresh european cucumber
1 cup water
½ cup white vinegar{6% acidity}
2 tablespoons sugar{you can add a little more depending on your taste}
1 teaspoon salt
½ teaspoon freshly ground black pepper

Garnish with;
Freshly chopped parsley
Freshly cutted dill{optional}

Direction;

Wash the cucumbers in cool running water,Inlagd Gurka coarsely peel around and sliced thinly. Transfer into a serving bowl.
Mix the rest of the ingredients until salt and sugar is dissolve.
Pour mixture into the bowl of cucumber, Add the garnish.                 Marinate it for atleast an hour inside the fridge before serving.
