Eugene’s Cucumber Salad

On very rare occasion you’ll meet somebody so generous to share his recipe that I’m still regularly serving on my salad buffet.

I relieved Chiefcook Eugene onboard M.T. Nordic Glory (She’s My 11th Sea Horse) few years ago.

So, its just fair enough to include his name on this salad. Thanks again Eugene!!!

Eugene’s Cucumber Salad

You will need;

400g fresh european cucumber, run a fork from tip to bottom, cut halve and quarter it lengthwise then slice thinly.
1 medium (150g) fresh tomato, diced
1 small (100g) onions, finely chopped
1 tablespoon freshly chopped dill{or springonions}
1 tablespoon freshly chopped parsley
2 tablespoons olive oil
1 teaspoon sugar
Salt and freshly ground black pepper


Place the first 5 ingredients in a mixing bowl. (if you’re not serving it right away, keep aside inside the fridge.)

And just before serving,  Add the olive oil, sugar and season with salt and freshly grounded black pepper.

Toss lightly, serve and enjoy! =)


  1. The salad is very fresh an inviting. I have lots of cucumbers in my fridge right now and luckily they are English cucumbers (is that the same as the European?). And the instructions here are so easy to follow. Thanks for sharing this and have a wonderful week!
